Angel Hair Pasta with Chicken

 

2 Tbsp olive oil, divided
2 skinless, boneless chicken breasts, cut into 1-inch cubes
1 carrot, sliced into 1/4-inch pieces
10-oz. frozen broccoli florets, thawed
2 cloves of garlic, minced
12-oz. angel hair pasta
1 tsp. dried basil
1/4 c. grated Parmesan cheese

Heat 1 tablespoon olive oil in a medium skillet over medium heat and add in the chicken. Cook, stirring, until chicken is cooked through (about 5 minutes). Remove from skillet and drain on paper towels.

Heat remaining oil in the same skillet, and begin heating water for the pasta. Add sliced carrot to the skillet and cook, stirring, for 4 minutes. Add broccoli and garlic to the skillet, cook, stirring, for 2 minutes longer.

Cook pasta according to package directions. While the pasta is cooking, add chicken broth, basil, and Parmesan to the skillet. Stir to combine. Return chicken to skillet. reduce heat and simmer for 4 minutes.

Drain pasta. Place in large serving bowl. Top with chicken and vegetable mixture. Serve.

  • Could use more spices

  • That's according to me; some of my family liked it "as is." We all agreed it needs more veggies, mushrooms, black olives, etc.
