Apple Muffins with Brown Sugar Sauce

1 Tbsp. butter, softened
1 egg, lightly beaten
1 c. brown sugar
1 c. flour
2 Tbsp. hot apple juice or boiling water
1 tsp. baking soda
1 tsp. vanilla
1 c. tart apples, peeled and chopped
1/2 c. chopped walnuts or pecans

Preheat the oven to 350° F. Grease the muffin cups/pan. Combine all of the ingredients in the order listed above. Fill muffin cups 3/4 full, and bake 20-25 minutes.

Brown sugar sauce:
1 c. brown sugar
2 Tbsp. flour
1/2 c. hot apple juice or water
4 Tbsp. butter
1 tsp. vanilla

Combine ingredients and cook over medium heat until thick. Serve hot, over muffins.

Makes 1 dozen.

  • The sauce took a while to make. Be sure to use a lot of Pam in the pan--and don't over bake!
