Bacon/Cheddar Crock Pot Potatoes

12 oz. pkg. bacon, crisply cooked and crumbled
1 onion, thinly sliced
6 potatoes, peeled and thinly sliced
3 c. cheddar cheese, shredded
Garnish: chopped green onions

Line a crockpot with aluminum foil so it can fold over together on the top of potatoes. Spread half of the crumbled bacon evenly across the bottom of the crock pot. Cover with half of the sliced onions; top with half of the potatoes. Repeat the layers. Fold together the foil, creating a pocket over the potatoes. Cover and cook on low for 4-6 hours. A half hour before serving, add the shredded cheese and stir gently. Cover and heat through. Top with chopped green onions right before serving.
