Barbara's N.Y.C. Baked Macaroni & Cheese

16-oz. box of elbow macaroni
6-oz. sharp cheddar cheese, diced, not small
3-oz. extra sharp cheddar cheese, diced, not small
1/2-3/4 c. of sweet butter
8-oz. evaporated milk
Salt and pepper to taste
1 egg

Preheat oven to 350°—375° F. Boil macaroni as per box directions. Set aside. Add cheese, butter, milk, salt, pepper and egg in a 2-quart pot over medium heat, stirring as cheeses melt so as not to stick or burn. Use a colander to strain cooked macaroni. In the same pot that you boiled the macaroni, put macaroni in pot, pour cheese sauce over macaroni and mix well. Pour the mixture into a 2-3-quart casserole dish. Cook for 45-60 minutes; until brown crust forms on top and sides of dish. Remove from oven; place on trivet to set and cool before serving.
