Basil Tart

1 refrigerated pie crust
1 1/2 c. shredded Mozzarella cheese
5 Roma tomatoes
1/4 c. Parmesan cheese
1/2 c. mayonnaise
1/8 tsp. white pepper
4 cloves of garlic
1 c. fresh basil

Put pie crust in a 9-inch pie pan; bake as directed on box (450° F for 9 minutes). Next add 1/2 cup of mozzarella and cool slightly. Cut and drain on a paper towel the Roma tomatoes. Next, mix the Mozzarella cheese, Parmesan cheese, mayonnaise and white pepper, set it aside. In food processor combine the garlic and fresh basil. In the bottom of the pie crust add tomatoes. For the next layer, add basil mix and then the cheese mixture. Bake at 375° F for 35-40 minutes or until golden brown
I have added chicken to this also or Italian sausage.

  • I was so pleased with this recipe! The only thing that could improve on the flavor would be Jersey tomatoes!
