Blackberry Wine Cake

1 box white cake mix
1 box blackberry or black raspberry gelatin
4 eggs
1 c. vegetable oil
1 c. blackberry wine

Preheat oven to 350° F. Mix together the cake mix and gelatin. Add eggs and oil. Mix well. Then add wine and mix well. Bake for 45-60 minutes.
Variations: May frost with cream cheese frosting or put glaze on cake when done. You may also add fresh blackberries in the middle of the cake when done and top with Cool Whip ® to add a decorative touch.

  • This cake is perfect for the holidays and is a beautiful color and always requested. I use a cup of sugar and about a half a cup of blackberry wine mixed together and brought to a boil. Then I add about a cup of pecan halves into the sugar mixture and cook for a few minutes longer. I then pour the pecan glaze on top of the bundt shaped cake and everyone just loves it.

  • I did this cake for xmas day. everyone loved it! for frosting, I mixed already prepared philadelphia cheese w/ 8oz tub whipped cream.added blacberrys.chilled in fridge.delicious!

  • Before pouring mix cake in pan put 1/2 cup chopped pecans in pan then pour cake mix over top.
