Cheese Broccoli Soup

2 c. sliced carrots
1 1/2 c. sliced celery
2 c. broccoli florets
1 c. diced onion
1 c. butter
4 c. milk
1 can chicken broth or water
2 c. cheddar cheese (or Velveeta)

(This recipe can be halved)
Start by boiling carrots. While they are cooking, slice celery and add to carrots. While they are cooking get broccoli florets ready, then add them to carrots and celery (it doesn't matter if it is not covered in water). Cover and steam cook them a few minutes, then drain. Let veggies sit in strainer. Put in butter and onion in broth or water; stir. When it is transparent, add flour; stir till smooth. Add liquid and cook about 10 minutes. Add diced cheese, stir till mostly melted, add veggies. It is done when cheese is all melted.

  • One cup of butter! Is this a typo? That's two sticks of butter.
