Cherry Pie

3 c. frozen pitted tart red cherries, thawed & juice kept
1 c. sugar
1/2 tsp. salt
1/4 c. flour
1 Tbsp. butter
4 drops of almonds extract
4 drops of vanilla extract
2 9-inch pie crusts

Pour the cherry juice into a saucepan and heat over medium heat. Whisk in the sugar, salt and flour, and heat until mixture becomes thick. Remove from the heat, and add the cherries, butter and extracts. Pour into pie crust. Add the top crust and pinch the edges and vent the top. Bake at 450° F for 10 minutes, then reduce the temperature to 350° F and bake for 40-45 minutes.

Makes 8 servings.
