Curried Meatballs

1-lb. ground meat loaf mix
2 eggs
1/4 c. unseasoned bread crumbs
3/4 tsp. salt
1 1/4 tsp. hot curry powder
1/4 tsp. black pepper
1 Tbsp. vegetable oil
1 large onion, sliced
14 1/2-oz. chicken broth
14-oz. coconut milk
8-oz. frozen green beans and toasted almonds
3 c. instant rice

1. Combine ground meat loaf mix, eggs, breadcrumbs, salt, 1/2 tsp. of the hot curry powder and black pepper. Shape into 18 meatballs, about 1 heaping teaspoon each.
2. Heat oil in a large skillet on medium-high heat and sauté onion about 5 minutes. Add broth, coconut milk and remaining curry powder. Bring to boil.
3. Add meatballs. Simmer, covered, turning the meatballs over halfway through cooking. Stir in green beans and toasted almonds. Bring to boil. Stir in instant rice. Cover and remove from heat. Let stand, covered, for 5 minutes.

Serves 6.
