Dad's Favorite Pecan Sandies

"These were my Dad's favorite Christmas cookies. They are flavorful but
not overly sweet—which is a good break from some of the over-the-top rich
recipes there are during the holidays."

1 c. butter, softened (real butter; no substitutes)
1/2 c. sugar
2 tsp. real vanilla extract
2 c. flour
1 c. finely chopped pecans
1 c. powdered sugar for rolling finished cookies in

In a bowl, cream butter and sugar; stir in vanilla. Add flour; mix on low until well blended. Stir in pecans; mix well. Chill for 30 min. Roll into 1" balls or fingerlings; place on a greased baking sheet. Bake at 350° F for 15-18 minutes or until bottom edges are golden brown. Cool slightly and roll in powdered sugar.

  • A delicious crispier/less dense version of the ball style pecan cookie. Really delicious.
