"I would like to share one of my favorite Christmas Cookie recipes…
and I am famous for my Christmas Cookies, even though that IS bragging!
These are a German cookie; I got the recipe from a lovely German lady
many years ago."


1 c. butter
2 c. flour
1/2 c. granulated sugar
1/2 tsp. almond extract
Red raspberry jelly
Confectioner's sugar

Cream the butter and sugar until fluffy. Add the flour and extract and mix well. Roll the dough into logs about the diameter of a quarter, and wrap in waxed paper. Refrigerate overnight. Remove from refrigerator about 1/2 hour before baking; slice into 1/8" coins. Bake at 375° F for about 9 minutes, or until edges are just golden brown. While they are still hot, add about 1/4 tsp. of jelly to one cookie and top with another. Press together a bit and let cool on cooling rack. When cool, sprinkle with confectioner's sugar.
