3 c. flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
1 1/2 c. canned pumpkin
2 c. sugar
1 1/4 c. vegetable oil
4 eggs
1/2 c. raisins
1 1/2 c. chopped nuts

Preheat oven to 350° F. Combine flour, baking soda, baking powder, salt and cinnamon and mix well. In a separate bowl, combine together canned pumpkin, sugar, vegetable oil and eggs. Add to flour mixture. Mix well. Add the raisins and chopped nuts to the batter. Bake for 40 minutes or until toothpick comes out clean.

Makes two loaves.

  • Pumpkin Bread

  • I made this bread along with the banana bread. It was delicious and moist and very easy to make. My family also loved this bread, even the ones who don't like pumpkin.
