Garlic Herb-Spinach and Mushroom Baked Chicken Breasts

1 herb/garlic spice packet
White wine
Olive oil
4 chicken breasts, boneless and skinless
8-oz. brown mushrooms, sliced
1 bag fresh baby spinach
Mozzarella and Parmesan cheeses, shredded

Mix the spice packet with 1/2 cup white wine and 1/4 cup olive oil. Put the chicken breasts in a casserole dish; pour 1/3 of spice mixture over the chicken breasts. Add the sliced mushrooms and spinach; top with shredded Mozzarella. Pour on the remainder of the spice mixture. Cover and bake at 350° F for 30-40 minutes. Remove from the oven; cover and top with 1/4 cup of shredded Parmesan cheese.

This is a very easy recipe and great for potluck dinners.
