Irish Bread

 

3 c. flour
1/2 c. sugar
2 1/2 tsp. baking powder
1/4 tsp. salt
1/2 stick butter at room temp.
1 1/2 or possibly 1 1/4 cup milk (use judgment as mixing)
1/2 box raisins
1/2 box caraway seeds

Butter and flour a 10" cast iron skillet. Heat it in 350° F oven. Mix all dry ingredients well. Add butter and mix well. Add milk slowly. (Try not to use all 1 1/2 cups if possible, but make sure dough is fully blended.) Add raisins and caraway seeds (to your liking). Put mixture in buttered and floured skillet (be careful—it's hot). Add a good sprinkle of sugar on top. Bake for 1-1 1/4 hours until golden brown. Best served slightly warm with butter on top!
