Lentil Soup for a Crowd

 

Soak 1-lb. lentils in water for a few hours.

In a large soup pot, pour in 1/4 c. canola or corn oil. Add:
4 c. chopped onions
4 c. chopped leeks
1 tbsp. crushed garlic
1 tbsp. fresh parsley
1 tsp. cumin
1 tbsp. salt
1/2 tsp. pepper
Sauté 15 minutes. Then add:
4 c. chopped carrots
4 c. chopped celery

Drain lentils from soaking water and add lentils to veggies. Pour in:
3 qt. chicken stock
1/4 c. tomato paste

Cook 1 hour on high simmer. If desired add 1 Kielbasa, sliced. Cook 10 minutes more.
