Mom's Casserole

 

1-lb. hamburger, browned
1 pkg. egg noodles (8 to 16-oz.) cooked and drained
1 can creamed corn
1 can chicken rice soup, undiluted
1 onion

Preheat oven to 350° F. Put ingredients into greased casserole dish, cover and bake for 45 minutes.

  • This was Mom's recipe, made up during the Depression. It was (and is!) good, but the memories make it truly special.

  • Mom's Casserole

  • I have fixed this casserole many times and I like it. I do not bake it. I cook the hamburger and onion in an electric fry pan. When the hamburger and onion is cooked completely (medium setting), I add the chicken and stars and the creamed corn to it(simmer setting). Meanwhile I have already cooked the egg noodles and drained them. I add the egg noodles last. I let the casserole simmer gently for approximately 5 minutes. It is ready to eat without baking it. It is very moist and reminds me of hamburger helper in some ways but is tastier. Forget baking it and eat as is. Salt and pepper naturally helps to season this casserole. I think that whoever designed this recipe used what was on hand at the time. I understand that especially in this day and time.

  • I also found it to be too dry. However, next time I'll add only 8 oz of noodles, or add another can of soup. Other than that, my family enjoyed it.

  • I found this recipe to be too bland and dry. Could be I used too many noodles. Next time I'll add stewed tomatoes and tomato sauce or something like that.
