3 or 4 overripe bananas 1 1/4 c. sugar 1 stick unsalted butter, melted and slightly cooled 2 eggs 1 tsp. vanilla extract 1 1/2 c. flour 1/2 tsp. salt 1 1/2 tsp. baking soda 1/2 c. chopped walnuts
Preheat the oven to 350° F degrees. Lightly grease a 9" x 5" x 3" loaf pan. Place the bananas and sugar in a mixing bowl and beat well for about 2 minutes. Add the butter, eggs and vanilla, whipping well. Scrape the sides of the bowl and add the flour, salt, baking soda and nuts. Combine but do not over-mix. Pour into pan and bake until golden brown and firm in the center, about 1 hour.
