Banana Bread

3 or 4 overripe bananas
1 1/4 c. sugar
1 stick unsalted butter, melted and slightly cooled
2 eggs
1 tsp. vanilla extract
1 1/2 c. flour
1/2 tsp. salt
1 1/2 tsp. baking soda
1/2 c. chopped walnuts

Preheat the oven to 350° F degrees. Lightly grease a 9" x 5" x 3" loaf pan. Place the bananas and sugar in a mixing bowl and beat well for about 2 minutes. Add the butter, eggs and vanilla, whipping well. Scrape the sides of the bowl and add the flour, salt, baking soda and nuts. Combine but do not over-mix. Pour into pan and bake until golden brown and firm in the center, about 1 hour.

  • I've tried making banana bread for my family several times because I love it. They've never been fans.This recipe was my last attempt at it and ding! Ding! WE HAVE A WINNER! They went NUTS over it! So moist and sweet. I'll never try another recipe!

  • this was a delicious, moist bread, with just the right amount of sweetness. It was very easy to make. My family loved it.
