Sue's Banana Bread

4 small bananas
1 1/2 c. plus 2 Tbsp. flour
1 c. sugar
1/3 c. melted butter
1 large egg
3/4 tsp. baking soda

Mash bananas. Blend in sugar, egg, flour, butter and baking soda. Pour into lightly-greased bread pan. Bake 1 hour at 300° F.

Makes one loaf.

  • Good basic recipe

  • 2nd time making it I added cinnamon, 1/2 t of salt, used half white and half brown sugar. I always substitute apple sauce for the oil/butter in a recipe to make it more healthy. This recipe is nice and basic for switching it up a little.

  • The texture of the cake was fine but it was too flat tasteing needed more of something maybe more sugar.

  • Hi, its me again. I use Splenda,or Stevia in my recipe for these and again they are one of the best things that our diabetic family loves. Put a little butter on it after toasting it and oh what a delight. Also a little cream cheese depending on if you eat them for breakfast or just a snack. These are so moist and make up quickly.

  • This is a very simple and quick recipe to prepare. I had to bake it an extra 20 minutes. I wonder if it should have been baked at 350 degrees instead of the 300 as the recipe says.
