1 c. semi-sweet chocolate chips
1/2 c. smooth peanut butter
1/2 c. half-and-half
On top of stove carefully melt the chocolate chips (or use a microwave oven). They melt quickly. Remove from heat and beat in peanut butter then add the half-and-half a little at a time, beating after each addition.
Chill this for about 1 1/2 hours. Form into small balls and roll in one or all of the following: coconut, ground almonds or other nut, sprinkles (colored and/or chocolate), cocoa powder, confectioner's sugar.
Makes about 3 dozen.
Children can help by doing the rolling into balls and adding the garnishes. They can be put in little candy papers, placed on an attractive tray and given as a gift or served for special events. To me, they taste very European, probably because they aren't too sweet and partly because they are very creamy. This recipe will be keeper!
