Italian Tortilla Stacks

1-lb. ground beef
1 pkg. dry spaghetti sauce mix
1 16-oz. can diced whole tomatoes
1 6-oz. can diced green chilies, hot or mild
1 8-oz. can tomato sauce
1 1b. ricotta cheese
1 egg
2 c. grated Monterey Jack cheese
8 corn tortillas
13" x 9" pan

Brown ground beef until crumbly. Drain grease. Add spaghetti sauce mix, tomatoes, tomato sauce, and chilies. Simmer 10 minutes. Combine egg and ricotta cheese in bowl.
To assemble: Place 1/3 cup sauce on bottom of pan. Spread 1/3 cup ricotta mixture on corn tortilla. Place on sauce in the bottom of pan. Place next tortilla with ricotta mixture on bottom of pan next to other tortilla. Top each tortilla with 1/3 cup sauce, top with 1/3 cup Monterey Jack cheese. Continue stacking until each stack has 4 tortillas. Top with remaining Monterey Jack cheese. Bake at 350° F for 30 minutes. Let stand 5 minutes before serving. Serves 6.

Nice with a green salad and crusty French bread.

  • I don't know why anonymous from Victorville,CA gave you one star just because you didn't count the calories for her. She can just do it herself, none of the rest of us are worried about it, that isn't what this forum is for. Go find yourself a diet website if that is what you want. If she didn't cook the dish she shouldn't be reviewing at all. That is what this forum is for, someone needs to educate her. She should not have rated you one star, that's just being mean. The dish was wonderful, just the thing to bring comfort on a cold winter night. Thanks for passing the recipe on to us. It was really good. I added onion and garlic to my ground beef for extra spice. Ommm good!
