Roxann's Mexican Enchiladas

1-lb. ground hamburger
1 pkg. taco seasoning
10 pkg. soft shell tortillas
2 cans enchilada sauce
1 pkg. Colby shredded cheese

Fry hamburger, drain. Mix in taco seasoning. Fill each tortilla with hamburger mixture. Fold with the seam placed down in a 9" x 13" cake pan. Place all tortillas side by side. Pour enchilada sauce over the top. Sprinkle with cheese. Bake at 350° F until cheese is a golden brown. You can serve with sour cream and taco sauce.

  • Not too much spice and with the few extras, olives, sour cream and yes jalepenos,along with talimook cheddar cheese shredded, this was really tasty

  • Boring is all I can say. Being from California I have had excellent Mexican food and these were not it.

  • Try adding beans, rice, olives, etc. It's delicious!
