1-lb. ground beef 1/2 c. sliced celery 1/3 c. chopped onion 1 Tbsp. shortening Salt & pepper to taste 1 pkg. beef gravy mix 1 c. sliced cooked carrots 1/4 tsp. thyme leaves 2 1/2 c. hot mashed potatoes 1/4 c. grated cheddar cheese
Sauté ground beef, celery and onion in shortening. Drain excess liquid. Season with salt and pepper; stir in gravy mix, carrots and thyme. Pour into baking dish, 8" x 8" x 2". Spoon hot mashed potatoes around edge of dish, sprinkle with grated cheddar cheese. Bake in 375° F oven for 30-35 minutes.
