Pumpkin Butter

Another use for pumpkin that is low fat and great for English muffins, muffins, toast or even as a topping on cheesecake. Makes a perfect hostess gift when visiting during the holidays.

1 29-oz. can pumpkin puree
1/2 tsp. ground cloves
3/4 c. apple juice
1 1/2 c. white sugar
2 tsp. ground ginger
2 tsp. ground cinnamon

Combine pumpkin, apple juice, spices and sugar in a large saucepan; stir well. Bring to a boil. reduce heat and simmer for 30 minutes or until thickened. Stirring frequently. Spoon hot pumpkin mixture into hot jars filling 1/4 inch from the top. Remove air bubble, wipe jar rims. Cover at once with metal lids, and screw on bands. Process in boiling water bath for 10 minutes.

Yields 40 servings.

  • Since it was put into jars it should state how many cups it yields. I didn't make this yet but will try it soon.

  • Somethig Missing???

  • How can I make this recipe and give it a proper rating if the Apple Juice is missing from the list of ingredients?? No wonder you don't have any ratings at all! You cannot make this Pumpkin Butter without the proper list of ingredients. Also, "40 Servings" does not tell us how big a serving size is. Please learn how to write a proper recipe!!
