Another use for pumpkin that is low fat and great for English muffins, muffins, toast or even as a topping on cheesecake. Makes a perfect hostess gift when visiting during the holidays.
1 29-oz. can pumpkin puree 1/2 tsp. ground cloves 3/4 c. apple juice 1 1/2 c. white sugar 2 tsp. ground ginger 2 tsp. ground cinnamon
Combine pumpkin, apple juice, spices and sugar in a large saucepan; stir well. Bring to a boil. reduce heat and simmer for 30 minutes or until thickened. Stirring frequently. Spoon hot pumpkin mixture into hot jars filling 1/4 inch from the top. Remove air bubble, wipe jar rims. Cover at once with metal lids, and screw on bands. Process in boiling water bath for 10 minutes.
