    Nancys Mandarin Orange Salad Recipe

Nancy's Mandarin Orange Salad

6-oz. orange gelatin
1 c. boiling water
2 c. vanilla ice cream
8-oz. light whipping cream
33-oz. mandarin oranges

In a glass serving bowl, dissolve gelatin with boiling water, completely. Add the vanilla ice cream, stirring until mostly melted. Add whipping cream, and beat on medium speed until blended in. Refrigerate for about 15 minutes, until slightly thickened. Drain the mandarin oranges. Remove gelatin from refrigerator and stir in the oranges, saving a few to garnish the top. Refrigerate several hours or overnight.
