Lefse

5 large potatoes
1/2 c. cream, heavy
1 tsp. salt
3 Tbsp, butter
Flour (use 1/2 cup to each cup of riced/mashed potatoes)
Brown sugar, to taste

Peel, half and boil potatoes (cover with water and cook until tender). Run the hot potatoes through a ricer. Place into a large bowl. Add the cream, butter and salt. Beat until light. Let cool to room temperature. Add the flour. Take a piece of dough and roll as for a pie crust. Bake on top of the stove or on a large pancake griddle until light brown spots appear on both sides. Place between two cloths to keep from becoming dry.

To eat, butter a lefse, and sprinkle with brown sugar. Roll it up, and eat! Or you can fill with anything you like. This is a traditional Norwegian treat, and we make it every Christmas!
