Pumpkin Roll

3 eggs
1 c. sugar
2/3 c. of pumpkin
3/4 c. of flour
1 tsp. baking powder
1 tsp. cinnamon
3 tsp. pumpkin spice
1/4 tsp. salt

1 c. powdered sugar
1 8-oz. block of cream cheese
4 Tbsp. butter
1/2 tsp. vanilla

Beat the eggs for 5 minutes slowly adding the sugar. Hand mix the pumpkin, flour, baking powder, cinnamon, pumpkin spice and salt; mix very well, and eventually add into the egg mixture. Pour (mixture) into a 10x15 greased and floured jelly roll pan and bake at 375° F for 12-15 minutes. When done, turn out on a powdered sugar flour towel and roll up and let completely cool.

While cooling, mix the filling: powdered sugar, cream cheese, butter and vanilla; beat until smooth. When the roll is cool, unroll and fill with the cream cheese filling and reroll; be sure to spread the filling outward to the edges. Set on a serving platter and sprinkle with powdered sugar and crushed pecans.
