Spinach, Mushroom and Cheese Enchiladas

1 bag fresh spinach leaves
2 bags shredded mozzarella cheese
4 cans enchilada sauce
1 can sliced jalapeño peppers
1 pkg. fresh mushrooms
1 pkg. tortilla shells

Slice and cook fresh mushrooms, cut up spinach and add to pan. Roll up tortillas with heaping helping of spinach and mushrooms and cheese pour two cans of enchilada sauce in bottom of pan put rolled up tortillas in pan and cover with last two cans of enchilada sauce cover with foil.

  • a few alterations....

  • great recipe, however, i used only 1 bag of cheese and 1 can of enchilada sauce and cooked at 375 without covering with foil. these alterations made for a delicious and non soggy enchilada. :))
