Tamale Loaf

1 small onion, chopped
2 1/2 c. canned tomatoes, diced
1 c. yellow cornmeal
1-lb. cooked ground beef
15-oz. canned cream corn
2 eggs, well beaten
1 tsp. paprika
1 tsp. chili powder
Salt & pepper to taste
1 can black olives

Preheat oven to 350° F. In a pan, sauté the onion in a small amount of butter. Add the tomatoes & their juice and bring to boil. Very slowly add the cornmeal, stirring constantly (this takes 10 minutes, you can't rush the process or lumps will happen). Add the rest of the ingredients and cook until well blended. Then turn mixture into a 9" x 5" x 3" loaf pan and bake for 45 minutes.

Makes 6-8 servings.
