Tiny Pecan Pies

1 stick butter
1 small package cream cheese
1 c. flour
Dash of salt
2 eggs
1/3 c. white sugar
2/3 c. dark Karo syrup
1 tsp. vanilla
1/2 c. chopped pecans

Combine first 4 ingredients to make dough; shape dough into 24 small balls; Place each ball of dough in greased baby muffin cups; press dough against bottom and sides of muffin cups. Combine remaining ingredients to make filling; pour in pastry lined muffin cups. Bake at 350° F for 15 to 20 minutes. Cool. Run knife around of edge of pies and remove from muffin cups.

Yield: 24 servings.

  • These are one of my favorite's to make for Christmas. On my baking list for tomorrow. So easy and yummy.
