Vicki's Most Delicious Pumpkin Bread

Mix and set aside:
2 1/2 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 small box instant lemon pudding
1 small box instant butterscotch pudding
Chopped nuts, optional

Mix well until smooth:
15-oz. can solid pack pumpkin
2 c. sugar
1 1/2 c. oil
5 eggs

Preheat oven to 350° F. Grease a small/mini loaf pan. (This recipe is just right for 16 small loaves.) Mix dry ingredient mixture into wet ingredient mixture. Pour into pan(s). Bake for approximately 20-25 minutes. This bread is so moist.

  • Took this bread to Tai Chi class and it was given praise as the moistest pumpkin bread ever! All I thought was how it was the easiest ever.

  • This is always a winner at my house and at work! The cook times vary depending on what size loaf pan you are using, if using regular loaf pans it will take about an hour and a half but muffins or small loaf pans are much quicker

  • Recipe cals for 20=25 mins! That is a laugh!!!

  • The cake is in my oven right now .... at 25 minutes I had a pan of soup!! I'm now up to over one hour baking and it is still not baked! I had great hopes as have to bring to ladies bkfst group tomorrow morn, but it definitely lookis like I'll have t find another recipe!

  • Great tasting with unique ingredients

  • This recipe is delicious. Spices and ingredients are unique. Pumpkin bread flavor is somewhere between pumpkin bread and gingerbread. I added a brown butter/maple glaze. Yummm. Bring on the holidays!
