Zucchini Bread

 

1 c. chopped walnuts
1 c. vegetable oil
1 1/2 tsp. baking soda
3/4 tsp. baking powder
1 tsp. cinnamon
2 c. grated zucchini, unpeeled
1 c. raisins
1 tsp. vanilla
1 3/4 c. sugar
3 1/2 c. flour
1 1/2 tsp. salt
4 eggs

Preheat oven to 350° F. Grease and flour 2 loaf pans. Chop walnuts in medium pieces. Beat eggs; beat in sugar and oil. Combine dry ingredients and add to egg mixture. Mix alternately with squash. Stir in raisins, nuts and vanilla. Turn into loaf pans. Bake on low rack for 55 minutes.

NOTE: Drain squash before mixing into other ingredients; you might have to add a bit more flour.

OPTIONAL: After cooling, glaze the loaves with a mixture of powdered sugar, milk and vanilla.
