How to Make Freezer Jam

Easy No-Cook Freezer Jam

Savor the flavor of summer all year long with homemade jam. With fresh fruit, sugar, lemon and pectin you can make jam in just 30 minutes.

Freezer Jam Recipe

You will need:

  • 2 (8 oz) canning jars or plastic containers
  • 1 2/3 cups crushed raspberries or peaches or strawberries
  • 2/3 cups granulated sugar
  • 2 tbsp. Ball instant pectin
  • 1 tbsp. lemon juice (Use only when making peach jam.)

Note: Consider making individual batches instead of doubling the recipe — set may not occur in large batches.

How to Prepare Fruit

When preparing the fruit, imagine how small you want the fruit bits on your morning toast.

Strawberries: Hull and crush one layer of ripe strawberries at a time using a potato masher. Strawberries should be slightly lumpy and NOT pureed.

Raspberries: Crush one layer of raspberries at a time using a potato masher. Raspberries should be slightly chunky and NOT pureed.

Peaches: Peel and pit the peaches.  Cut the peaches into thin slices and then finely chop.

Directions

In a medium bowl, stir sugar and pectin in a bowl. Add fruit and stir for 3 minutes until the sugar dissolves. (If you are making peach jam, add lemon juice to the mixture.) Be sure to use a timer, so that you stir the ingredients for the full 3 minutes. Otherwise you will get lumpy or unevenly set jam.

Ladle jam into jars or containers and leave ½ inch space at the top. Wipe off the top edges and immediately cover. Let jam stand at room temperature for at least 30 minutes before putting it into your freezer.

Your jam is now ready to use. You can store it in your fridge for 3 weeks or in your freezer for up to 6 months.  Thaw frozen jam in your refrigerator and stir before using.
